Authentic Moo Shu Pork

Ingredients
- 8 pieces Chinese pancakes
- 2 cloves, minced Garlic
- 2 tablespoons Sesame oil
- 2 tablespoons Soy sauce
- 2 tablespoons Hoisin sauce
- 3, chopped Green onions
- 1 cup, sliced Mushrooms
- 2 cups, shredded Cabbage
- 2 Eggs
- 1/2 pound, thinly sliced Pork loin

Instructions
- Heat 1 tablespoon of sesame oil in a large skillet over medium heat. Crack the eggs into the skillet and scramble them until fully cooked. Once done, remove the scrambled eggs from the skillet and set them aside.
- In the same skillet, heat another tablespoon of sesame oil. Add the thinly sliced pork loin and cook until no longer pink. Remove the cooked pork from the skillet and set it aside.
- Add the minced garlic, shredded cabbage, sliced mushrooms, and chopped green onions to the skillet. Stir-fry the vegetables for about 5 minutes, until they are tender.
- Return the cooked pork and scrambled eggs to the skillet. Stir in the hoisin sauce and soy sauce, ensuring that everything is well coated. Continue to cook for another 2-3 minutes, until all ingredients are well combined and heated through.
- Serve the Moo Shu Pork with the warm Chinese pancakes. Each person can spoon some of the pork and vegetable mixture onto a pancake, roll it up, and enjoy this authentic Chinese delicacy.
Tips
- For a vegetarian version, substitute tofu for pork. Add other vegetables like bell peppers or bamboo shoots for more texture and flavor. You can also substitute the Chinese pancakes with tortillas if they're not readily available.
