Pork shoulder
1 pound, thinly sliced
Garlic
4 cloves, minced
Cilantro roots
2 tablespoons, chopped (or cilantro stems if roots are unavailable)
Fish sauce
2 tablespoons
Oyster sauce
2 tablespoons
Soy sauce
2 tablespoons
Sugar
1 tablespoon
Black pepper
1 teaspoon
Vegetable oil
for brushing the grill
Lime wedges
for serving

Instructions

  1. In a mixing bowl, combine minced garlic, chopped cilantro roots, fish sauce, oyster sauce, soy sauce, sugar, and black pepper. Stir well to create a flavorful marinade.
  2. Add the thinly sliced pork shoulder to the marinade, ensuring each piece is well-coated. Cover and refrigerate for at least 1 hour, or overnight for a deeper flavor.
  3. Preheat your grill to medium-high heat, ensuring the grates are hot and ready for cooking.
  4. Thread the marinated pork slices onto skewers, making sure to leave a little space between each piece for even cooking.
  5. Lightly brush the grill grates with vegetable oil to prevent the pork from sticking.
  6. Place the skewers on the grill and cook for about 3-4 minutes per side, or until the pork is cooked through and has a nice char on the outside.
  7. Once cooked, remove the pork skewers from the grill and let them rest for a few minutes to retain their juices.
  8. Serve the Moo Yang hot, accompanied by lime wedges for squeezing over the skewers.
