Fresh shrimp
1 pound, peeled and deveined
Garlic
3 cloves, minced
Scallions
2, finely chopped
Egg
1, beaten
Bread crumbs
1/2 cup
Salt
1/2 teaspoon
Black pepper
1/4 teaspoon
Vegetable oil
for frying
Lemon juice
1 tablespoon
Soy sauce
2 tablespoons
Chili sauce
1 tablespoon

Instructions

  1. In a food processor, combine the shrimp, minced garlic, and chopped scallions. Pulse until the shrimp is finely chopped but still retains some texture, about 10-12 pulses.
  2. In a large mixing bowl, add the shrimp mixture, beaten egg, bread crumbs, salt, and black pepper. Stir until well combined.
  3. Using your hands, shape the mixture into small cakes, about 2 inches in diameter and 1/2 inch thick.
  4. In a large skillet, heat about 1/4 inch of vegetable oil over medium heat until shimmering but not smoking.
  5. Carefully place the shrimp cakes in the hot oil, frying them until golden brown on both sides, about 3-4 minutes per side. Avoid overcrowding the pan; fry in batches if necessary.
  6. Once cooked, transfer the cakes to a plate lined with paper towels to drain excess oil.
  7. In a small bowl, whisk together the lemon juice, soy sauce, and chili sauce to create a zesty dipping sauce.
