- Fresh shrimp
- 1 pound, peeled and deveined
- Garlic
- 3 cloves, minced
- Scallions
- 2, finely chopped
- Egg
- 1, beaten
- Bread crumbs
- 1/2 cup
- Salt
- 1/2 teaspoon
- Black pepper
- 1/4 teaspoon
- Vegetable oil
- for frying
- Lemon juice
- 1 tablespoon
- Soy sauce
- 2 tablespoons
- Chili sauce
- 1 tablespoon
Instructions
- In a food processor, combine the shrimp, minced garlic, and chopped scallions. Pulse until the shrimp is finely chopped but still retains some texture, about 10-12 pulses.
- In a large mixing bowl, add the shrimp mixture, beaten egg, bread crumbs, salt, and black pepper. Stir until well combined.
- Using your hands, shape the mixture into small cakes, about 2 inches in diameter and 1/2 inch thick.
- In a large skillet, heat about 1/4 inch of vegetable oil over medium heat until shimmering but not smoking.
- Carefully place the shrimp cakes in the hot oil, frying them until golden brown on both sides, about 3-4 minutes per side. Avoid overcrowding the pan; fry in batches if necessary.
- Once cooked, transfer the cakes to a plate lined with paper towels to drain excess oil.
- In a small bowl, whisk together the lemon juice, soy sauce, and chili sauce to create a zesty dipping sauce.
