Morasa Polo - Jewel Rice
Morasa Polo, also known as 'Jewel Rice', is a Persian culinary gem that combines basmati rice's aromatic allure with saffron's golden charm. The orange zest's citrusy notes intermingle with an array of dried fruits and nuts, creating a riot of colors and textures worthy of a royal feast. This delightful dish is typically served at Persian weddings and Norooz, the Persian New Year, symbolizing abundance and wealth.
Ingredients
- 2 cups Basmati Rice
- 4 cups (for boiling rice) + enough to soak rice Water
- 1 teaspoon Salt
- 1/2 teaspoon Saffron threads
- 2 tablespoons Butter
- 1 tablespoon Orange zest
- 1/2 cup Raisins
- 1/2 cup Almonds, sliced
- 1/2 cup Pistachios, chopped
- 1/2 cup Dried cherries
- 1/2 cup Dried apricots, chopped
- 1/2 cup Dried cranberries

Instructions
- Rinse the basmati rice under cold water until the water runs clear. Soak the rice in plenty of water for 30 minutes, then drain thoroughly.
- In a small bowl, dissolve the saffron threads in 2 tablespoons of hot water to extract its vibrant color and aroma.
- In a large pot, bring 4 cups of water to a boil. Add the soaked and drained rice, salt, and saffron-infused water. Allow the rice to cook for 5 minutes, then drain and set aside.
- Melt the butter in a separate pot over low heat. Stir in the orange zest and dried fruits - cranberries, apricots, cherries, and raisins. Saute for 2-3 minutes until the fruits have slightly softened.
- Layer half of the parboiled rice over the fruit mixture. Fold gently to combine, ensuring each grain of rice is kissed by the fruity mixture.
- Spread the remaining rice over the top, creating a second layer. Drape a clean kitchen towel over the pot before placing the lid on top. This helps to absorb excess steam, ensuring a fluffy outcome.
- Let the rice steam over low heat for 30-35 minutes. Avoid the temptation to peek - the steam trapped inside is what makes the rice fluffy.
- Once cooked, remove the pot from heat and let it rest for 5 minutes. This allows the flavors to meld together.
- Finally, fluff the rice with a fork to mix the fruit and rice layers together. Transfer the Morasa Polo to a serving dish and garnish with chopped pistachios and sliced almonds for a festive touch.
