Creamy Morel Mushroom Pasta

Ingredients
- Parsley
- 1/4 cup, freshly chopped
- Salt and pepper

- Pasta
- 8 ounces, of your choice
- Parmesan cheese
- 1/2 cup, freshly grated
- Heavy cream
- 1 cup
- White wine
- 1/2 cup
- Garlic
- 2 cloves, finely minced
- Olive oil
- 2 tablespoons
- Morel mushrooms
- 1 cup, thoroughly cleaned and sliced
Instructions
- In a large pot, cook the pasta according to package instructions. Don't forget to salt the water for added flavor. Once the pasta is cooked, drain and set aside.
- Meanwhile, heat the olive oil in a large skillet over medium heat. Add the morel mushrooms and sauté until they are soft and golden, about 5 minutes.
- Next, add the finely minced garlic to the skillet. Sauté for another minute, until the garlic becomes fragrant.
- Pour in the white wine, letting it simmer until it reduces by half. This process imbues the mushrooms with a wonderful depth of flavor.
- Stir in the heavy cream and freshly grated Parmesan cheese. Allow the sauce to simmer until it thickens into a rich, creamy consistency.
- Add the cooked pasta to the skillet, tossing it gently to ensure each strand is beautifully coated in the creamy mushroom sauce.
- Season the dish with salt and pepper to taste. Adjust accordingly.
- Serve the pasta hot, garnishing each bowl with a sprinkle of freshly chopped parsley and a little extra Parmesan cheese if desired.
