Moroccan Spiced Lentil Soup

Ingredients
- 2 tablespoons Extra virgin olive oil
- 1, diced Yellow onion
- 2, diced Carrot
- 2, diced Celery stalks
- 3, minced Garlic cloves
- 1 cup, rinsed Red lentils
- 1 can (14.5 ounces) Canned diced tomatoes
- 4 cups Vegetable broth
- 1 teaspoon Ground cumin
- 1/2 teaspoon Ground coriander
- 1/2 teaspoon Ground turmeric
- 1/4 teaspoon Ground cinnamon
- 1 teaspoon Salt
- 1/2 teaspoon Black pepper
- 1/4 cup, chopped Fresh cilantro
- 2 tablespoons Lemon juice

Instructions
- Heat the olive oil in a large pot over medium heat. Add the diced onion, carrot, celery, and minced garlic. Cook, stirring occasionally until the vegetables are softened, about 5 minutes.
- Add the rinsed lentils, diced tomatoes with their juice, vegetable broth, cumin, coriander, turmeric, cinnamon, salt, and pepper to the pot. Stir well to combine all the ingredients.
- Increase the heat to high and bring the soup to a boil. Once boiling, reduce the heat to low and let the soup simmer for 20-25 minutes, or until the lentils are tender.
- Remove the pot from the heat. Stir in the chopped fresh cilantro and lemon juice.
- Ladle the soup into bowls and serve hot. Enjoy this heartwarming meal!
Tips
- For a smoother texture, you can blend half the soup using an immersion blender or standing blender. Make sure to blend in batches if using a standing blender and be careful as the soup will be hot.
