Mostarda Di Cremona

Mostarda di Cremona is a delightful Italian delicacy originating from the Lombardy region, where it has been cherished for centuries. This sweet and tangy condiment is made with candied fruits and infused with a mustard-flavored syrup, creating a perfect harmony of flavors. Traditionally served alongside boiled meats and aged cheeses, Mostarda di Cremona elevates any charcuterie board and adds a touch of sophistication to your dining experience.

Serves 16

Ingredients

Mixed fruit (pears, apples, cherries, apricots)
4 cups, chopped
Granulated sugar
2 cups
Water
1 cup
Mustard powder
1/4 cup
White wine
1/2 cup
Lemon juice
2 tablespoons, freshly squeezed

Instructions

  1. In a large pot, combine the chopped mixed fruits, granulated sugar, and water. Bring to a gentle boil over medium heat, stirring frequently to dissolve the sugar completely.
  2. Once the mixture reaches a boil, reduce the heat to low and let it simmer for about 45 minutes. Stir occasionally until the fruits are soft and the syrup has thickened to a honey-like consistency.
  3. In a small bowl, mix the mustard powder with a few tablespoons of water to create a smooth paste. Gradually stir this mustard paste into the fruit mixture, ensuring it is well incorporated.
  4. Add the white wine and freshly squeezed lemon juice, continuing to cook for an additional 15 minutes to allow the flavors to meld.
  5. Once the cooking time is complete, remove the pot from heat and let the Mostarda cool down to room temperature. Transfer to a clean jar or container and refrigerate. It can be stored for up to 2 weeks.

Tips

  • 💡 For an extra depth of flavor, consider adding a splash of balsamic vinegar to the syrup.
  • 💡 Feel free to experiment with different fruits based on seasonal availability. Figs and quinces are excellent additions.
  • 💡 Mostarda di Cremona pairs beautifully with a variety of cheeses, such as Gorgonzola or Parmigiano Reggiano, and can also be enjoyed with cured meats.
