Ingredients

Original recipe serves 4

Dried peaches
1 cup
Husked wheat (mote)
1/2 cup
Sugar
1/2 cup (adjust to taste)
Water
6 cups
Cinnamon sticks
2
Cloves
4
Ice cubes
as needed

Instructions

  1. In a large pot, combine the dried peaches, husked wheat, sugar, cinnamon sticks, cloves, and water.
  2. Bring the mixture to a boil over medium-high heat, then reduce the heat to low and simmer for 45 minutes, or until the peaches are soft and the wheat is tender.
  3. Once cooked, remove the pot from the heat and allow the mixture to cool to room temperature. This will enhance the flavors.
  4. After cooling, strain the mixture to remove the cinnamon sticks and cloves. You can reserve some peaches for garnishing.
  5. Serve the mote con huesillo in tall glasses, including a few cooked peaches and some of the wheat in each glass.
  6. Add ice cubes to each glass for a refreshing touch, and enjoy this delightful Chilean treat!
