Original recipe serves 4

Yam
3 cups, peeled and diced
Water
6 cups
Salt
1 teaspoon
Costeño cheese
1 cup, crumbled
Green onions
1/2 cup, chopped
Garlic
2 cloves, minced
Cilantro
1/2 cup, chopped (plus more for garnish)

Instructions

  1. In a large pot, combine the diced yam, water, and salt. Bring to a rolling boil over high heat.
  2. Once boiling, reduce the heat to medium and let it simmer until the yam is tender, approximately 30 minutes.
  3. Add the crumbled costeño cheese to the pot and continue cooking for another 15 minutes, allowing the cheese to melt into the soup.
  4. In a separate pan, heat a splash of oil over medium heat. Sauté the chopped green onions and minced garlic until fragrant and soft, about 5 minutes.
  5. Add the sautéed onions and garlic to the pot with the yam and cheese. Stir well to combine all the flavors.
  6. Fold in the chopped cilantro and let the soup cook for an additional 5 minutes.
  7. Serve the Mote de Queso hot, garnished with additional fresh cilantro for a vibrant touch.
