Moroccan Msmen Pancakes

Traditionally served with honey or jam, they are a delightful blend of crispy and soft textures that melt in your mouth.

Ingredients

Unsalted butter
1/2 cup, melted
Vegetable oil
1/4 cup
Warm water
1 cup
Salt
1 teaspoon
Semolina flour
2 cups
All-purpose flour
2 cups
Honey or jam
for serving

Instructions

  1. In a large bowl, mix together the all-purpose flour, semolina flour, and salt.
  2. Gradually pour in the warm water, stirring continuously to combine until a dough forms.
  3. Turn the dough onto a lightly floured surface and knead for about 5 minutes. The dough should become smooth and elastic.
  4. Divide the kneaded dough into 6 equal portions. Shape each portion into a ball.
  5. Generously brush each dough ball with vegetable oil. Let them rest for about 10 minutes.
  6. On a floured surface, roll out each ball into a thin circle about 8 inches in diameter.
  7. Brush the surface of each circle with the melted butter.
  8. Fold the dough circle in half to form a semicircle, then fold in half again to create a triangle shape.
  9. Repeat the process with the remaining dough balls.
  10. Heat a non-stick skillet over medium heat. Cook each triangle for about 2 minutes on each side until they turn golden brown and crispy.
  11. Serve the msmen warm, drizzled with honey or a dollop of your favorite jam.
