Mukimo is a beloved traditional Kenyan dish, rich in flavor and nutrition. This hearty mash combines creamy potatoes, sweet maize, protein-packed beans, and vibrant greens, creating a colorful and satisfying dish. Ingredients

Vegetable oil
2 tablespoons
Black pepper
1/2 teaspoon
Salt
1 teaspoon
Garlic
2 cloves, minced
Onion
1 medium, chopped
Greens (e.g., kale, spinach)
2 cups, chopped
Beans (cooked, e.g., kidney or black beans)
1 cup
Maize (cooked or canned corn)
1 cup
Potatoes
4 medium, peeled and diced

Instructions

  1. In a large pot, bring salted water to a boil. Add the diced potatoes and cook until tender, about 15 minutes. Drain and set aside.
  2. In a separate pot, heat the vegetable oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is softened and translucent, about 5 minutes.
  3. Add the cooked maize, beans, and chopped greens to the pot with the sautéed onions and garlic. Stir well and cook for another 5 minutes, allowing the greens to wilt.
  4. Using a potato masher or fork, mash the boiled potatoes in a large bowl until smooth and creamy.
  5. Add the mashed potatoes to the pot with the vegetable mixture, stirring well to combine all ingredients evenly.
  6. Season with salt and black pepper, adjusting to taste. Continue cooking for another 10 minutes, stirring occasionally, until heated through.
  7. Serve hot as a main dish or as a hearty side with grilled meats or stews. Enjoy the flavors of Kenya!
