Authentic Mulitas

Mulitas are a beloved Mexican street food that showcases the simple yet satisfying combination of crispy corn tortillas and melted cheese, layered with your choice of savory fillings like succulent chicken, beef, or pork. These delightful sandwiches are cooked on a griddle to achieve a perfect golden crust, making them an irresistible treat for any taco lover. Ingredients

  • Corn tortillas (8)
  • Shredded cheese (such as Oaxaca or Monterey Jack) (2 cups)
  • Cooked chicken, beef, or pork (shredded) (2 cups)
  • Cilantro (1/2 cup, chopped)
  • Sour cream (1 cup)
  • Guacamole (1 cup)
  • Salsa (of your choice) (1 cup)
  • Lime wedges (for serving)

Instructions

  1. Preheat a griddle or large skillet over medium heat.
  2. Take one tortilla and place it on the griddle. Sprinkle a generous handful of shredded cheese evenly over the tortilla.
  3. Add a layer of your choice of shredded chicken, beef, or pork on top of the cheese, ensuring it's evenly distributed.
  4. Top with another tortilla and press down gently to help the cheese stick.
  5. Cook for 2-3 minutes, or until the bottom tortilla turns crispy and the cheese is beautifully melted.
  6. Carefully flip the mulita and cook for an additional 2-3 minutes on the other side until golden brown.
  7. Repeat this process with the remaining tortillas and filling ingredients.
  8. Once cooked, cut the mulitas into quarters and serve immediately with salsa, guacamole, sour cream, chopped cilantro, and lime wedges.
