Ingredients
- Olive oil
- 2 tablespoons
- Onion
- 1 medium, diced
- Garlic
- 3 cloves, minced
- Carrot
- 1 large, diced
- Celery
- 2 stalks, diced
- Mung beans
- 1 cup, soaked for at least 2 hours
- Vegetable broth
- 4 cups
- Salt
- to taste
- Pepper
- to taste
- Cilantro
- 1/4 cup, chopped (for garnish)
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the diced onion, minced garlic, diced carrot, and diced celery. Cook until the vegetables are soft and fragrant, about 10 minutes.
- Stir in the soaked mung beans and pour in the vegetable broth. Bring the mixture to a boil.
- Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 45 minutes, or until the mung beans are tender.
- Season the soup with salt and pepper to taste, adjusting as necessary.
