Olive oil

1 medium, diced
Garlic

Carrot
1 large, diced
Celery
2 stalks, diced
Mung beans
1 cup, soaked for at least 2 hours
Vegetable broth
4 cups
Salt
to taste
Pepper
to taste
Cilantro
1/4 cup, chopped (for garnish)

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the diced onion, minced garlic, diced carrot, and diced celery. Cook until the vegetables are soft and fragrant, about 10 minutes.
