Dijon mustard
1 tablespoon

1/4 cup
Lemon juice

Cherry tomatoes
1 cup, halved
Red onion
1/2, thinly sliced
Mushrooms
2 cups, sliced
Asparagus
2 cups, trimmed and chopped

Instructions

  1. Bring a large pot of salted water to a boil. Add the chopped asparagus and blanch for 2 minutes until bright green and slightly tender. Immediately drain and rinse under cold water to stop the cooking process and maintain the vibrant color.
  2. In a large salad bowl, combine the blanched asparagus, sliced mushrooms, thinly sliced red onion, halved cherry tomatoes, and chopped fresh parsley.
  3. To prepare the vinaigrette, in a separate small bowl, whisk together the lemon juice, olive oil, Dijon mustard, honey, salt, and pepper until well combined.
