- 2 cups, trimmed and chopped
Instructions
- Bring a large pot of salted water to a boil. Add the chopped asparagus and blanch for 2 minutes until bright green and slightly tender. Immediately drain and rinse under cold water to stop the cooking process and maintain the vibrant color.
- In a large salad bowl, combine the blanched asparagus, sliced mushrooms, thinly sliced red onion, halved cherry tomatoes, and chopped fresh parsley.
