Ingredients

Olive oil
2 tablespoons
Garlic
2 cloves, minced
Onion
1 medium, sliced
Mushrooms
2 cups, sliced (any variety you prefer)
Cumin
1 teaspoon
Paprika
1 teaspoon
Salt
to taste
Black pepper
to taste
Cheddar cheese
2 cups, shredded
Tortillas
4 (8-inch) flour or corn tortillas
Fresh cilantro
for garnish

Instructions

  1. Heat the olive oil in a skillet over medium heat.
  2. Add the sliced mushrooms, onion, and minced garlic. Sauté until the mushrooms are golden brown and the onions are translucent, about 5-7 minutes.
  3. Season the mixture with cumin, paprika, salt, and pepper. Stir well to ensure that the mushrooms and onions are evenly coated with the spices.
  4. Remove the mushroom mixture from the skillet and set aside on a plate.
  5. In the same skillet, place a tortilla and sprinkle half of the shredded cheddar cheese on one side.
  6. Spread half of the mushroom mixture evenly over the cheese.
  7. Fold the tortilla in half to cover the filling, pressing gently to secure.
  8. Cook for 2-3 minutes on each side, or until the tortilla is crispy and the cheese is melted. You may need to add a little more olive oil for the second quesadilla.
  9. Repeat the process with the remaining tortillas, cheese, and mushroom mixture.
  10. Serve the quesadillas hot, garnished with fresh cilantro. Cut into wedges and enjoy!
