Mushroom and Cheese Quesadilla

Ingredients
- Olive oil
- 2 tablespoons
- Garlic
- 2 cloves, minced
- Onion
- 1 medium, sliced
- Mushrooms
- 2 cups, sliced (any variety you prefer)
- Cumin
- 1 teaspoon
- Paprika
- 1 teaspoon
- Salt

- Cheddar cheese
- 2 cups, shredded
- Tortillas
- 4 (8-inch) flour or corn tortillas
- Fresh cilantro
- for garnish
Instructions
- Heat the olive oil in a skillet over medium heat.
- Add the sliced mushrooms, onion, and minced garlic. Sauté until the mushrooms are golden brown and the onions are translucent, about 5-7 minutes.
- Season the mixture with cumin, paprika, salt, and pepper. Stir well to ensure that the mushrooms and onions are evenly coated with the spices.
- Remove the mushroom mixture from the skillet and set aside on a plate.
- In the same skillet, place a tortilla and sprinkle half of the shredded cheddar cheese on one side.
- Spread half of the mushroom mixture evenly over the cheese.
- Fold the tortilla in half to cover the filling, pressing gently to secure.
- Cook for 2-3 minutes on each side, or until the tortilla is crispy and the cheese is melted. You may need to add a little more olive oil for the second quesadilla.
- Repeat the process with the remaining tortillas, cheese, and mushroom mixture.
- Serve the quesadillas hot, garnished with fresh cilantro. Cut into wedges and enjoy!
