Mushroom and Cheese Tortellini

Ingredients

- a handful, chopped Fresh parsley
- 1 cup, grated Parmesan cheese
- 1 cup Heavy cream
- 1 lb Cheese tortellini
- 2 tablespoons Extra virgin olive oil
- 2, minced Garlic cloves
- 1 medium, chopped Onion
- 1 lb, sliced Mushrooms

Instructions
- In a large skillet, heat the extra virgin olive oil over medium heat.
- Add the chopped onion and minced garlic to the skillet. Sauté until the onion becomes translucent.
- Add the sliced mushrooms to the skillet and cook until they start to release their moisture and become tender. This should take about 5-7 minutes.
- While the mushrooms are cooking, prepare the cheese tortellini according to the package instructions. Once cooked, drain and set aside.
- Pour the heavy cream into the skillet with the mushrooms. Bring the mixture to a simmer.
- Stir in the grated Parmesan cheese into the skillet. Season the mixture with salt and black pepper to taste.
- Add the cooked tortellini to the skillet. Toss gently to coat every piece with the creamy sauce.
- Allow everything to cook for an additional 2-3 minutes, ensuring that the tortellini is heated evenly throughout.
- Just before serving, garnish the dish with a generous sprinkle of chopped fresh parsley. Enjoy!
