Mediterranean Mushroom and Feta Salad

Experience a taste of the Mediterranean with this refreshing salad. Ingredients

Salt
1/2 teaspoon or to taste
Black pepper
1/4 teaspoon or to taste
Balsamic vinegar
1/4 cup
Extra virgin olive oil
1/2 cup
Fresh basil leaves
1/2 cup, loosely packed and torn
Cherry tomatoes
1 cup, halved
Red onion
1/2, thinly sliced
Feta cheese
1 cup, crumbled
Baby spinach
4 cups, washed and dried
Mixed mushrooms
2 cups, sliced and sautéed

Instructions

  1. In a large bowl, add the sautéed mixed mushrooms, baby spinach, crumbled feta cheese, thinly sliced red onion, halved cherry tomatoes, and torn fresh basil leaves.
  2. In a separate small bowl, prepare the vinaigrette. Whisk together the extra virgin olive oil, balsamic vinegar, salt, and black pepper until well combined.
  3. Drizzle the homemade balsamic vinaigrette over the salad.
  4. Toss all the ingredients together until everything is evenly coated with the dressing.
