Ingredients

Mayonnaise
4 tablespoons
Avocado
1, sliced
Tomato
1, sliced
Lettuce
4 leaves
Burger buns

Olive oil

Dijon mustard
1 tablespoon
Worcestershire sauce
1 tablespoon
Egg
1, beaten
Breadcrumbs
1/2 cup
Garlic
2 cloves, minced
Onion
1, finely chopped
Mushrooms
2 cups, finely chopped
Quinoa
1 cup, cooked

Instructions

  1. In a large bowl, combine the cooked quinoa, chopped mushrooms, onion, minced garlic, breadcrumbs, beaten egg, Worcestershire sauce, Dijon mustard, and season with salt and pepper. Mix well until it forms a uniform mixture.
  2. Divide the mixture into 4 equal parts and shape each piece into a 1/2-inch thick patty.
  3. Heat the olive oil in a skillet over medium heat. Place the patties on the skillet and cook for 4-5 minutes on each side, or until they turn a beautiful golden brown and are thoroughly cooked.
  4. While the patties are cooking, toast the burger buns for a crisp, warm touch.
  5. To assemble the burgers, spread a tablespoon of mayonnaise on the bottom half of each toasted bun. Lay a lettuce leaf on top, followed by the mushroom and quinoa patty, a couple of tomato slices, and a few slices of avocado. Top with the other half of the bun.
