Mushroom and Quinoa Burger

Ingredients
- 4 tablespoons Mayonnaise
- 1, sliced Avocado
- 1, sliced Tomato
- 4 leaves Lettuce
- 4 Burger buns
- 2 tablespoons Olive oil
- to taste Salt and pepper
- 1 tablespoon Dijon mustard
- 1 tablespoon Worcestershire sauce
- 1, beaten Egg
- 1/2 cup Breadcrumbs
- 2 cloves, minced Garlic
- 1, finely chopped Onion
- 2 cups, finely chopped Mushrooms
- 1 cup, cooked Quinoa

Instructions
- In a large bowl, combine the cooked quinoa, chopped mushrooms, onion, minced garlic, breadcrumbs, beaten egg, Worcestershire sauce, Dijon mustard, and season with salt and pepper. Mix well until it forms a uniform mixture.
- Divide the mixture into 4 equal parts and shape each piece into a 1/2-inch thick patty.
- Heat the olive oil in a skillet over medium heat. Place the patties on the skillet and cook for 4-5 minutes on each side, or until they turn a beautiful golden brown and are thoroughly cooked.
- While the patties are cooking, toast the burger buns for a crisp, warm touch.
- To assemble the burgers, spread a tablespoon of mayonnaise on the bottom half of each toasted bun. Lay a lettuce leaf on top, followed by the mushroom and quinoa patty, a couple of tomato slices, and a few slices of avocado. Top with the other half of the bun.
