Mushroom and Swiss Country Potatoes

A hearty and delicious dish of country-style potatoes sautéed with mushrooms and topped with melted Swiss cheese.

Ingredients

  • Fresh parsley (1 tablespoon, chopped)
  • Salt and pepper (to taste)
  • Garlic (2 cloves, minced)
  • Olive oil (2 tablespoons)
  • Swiss cheese (1 cup, shredded)
  • Mushrooms (2 cups, sliced)
  • Potatoes (4 large, cubed)

Instructions

  1. Preheat the oven to 400°F.
  2. In a large skillet, heat the olive oil over medium heat. Add the potatoes and cook until golden brown, about 10 minutes.
  3. Add the mushrooms and garlic to the skillet and continue to cook until the mushrooms are soft, about 5 minutes.
  4. Season the potato and mushroom mixture with salt and pepper.
  5. Transfer the mixture to a baking dish and top with the shredded Swiss cheese.
  6. Bake in the preheated oven until the cheese is melted and bubbly, about 15 minutes.
  7. Garnish with fresh parsley before serving.
