
Mushroom and Swiss Country Potatoes
A hearty and delicious dish of country-style potatoes sautéed with mushrooms and topped with melted Swiss cheese.
Ingredients
- Fresh parsley (1 tablespoon, chopped)
- Salt and pepper (to taste)
- Garlic (2 cloves, minced)
- Olive oil (2 tablespoons)
- Swiss cheese (1 cup, shredded)
- Mushrooms (2 cups, sliced)
- Potatoes (4 large, cubed)
Instructions
- Preheat the oven to 400°F.
- In a large skillet, heat the olive oil over medium heat. Add the potatoes and cook until golden brown, about 10 minutes.
- Add the mushrooms and garlic to the skillet and continue to cook until the mushrooms are soft, about 5 minutes.
- Season the potato and mushroom mixture with salt and pepper.
- Transfer the mixture to a baking dish and top with the shredded Swiss cheese.
- Bake in the preheated oven until the cheese is melted and bubbly, about 15 minutes.
- Garnish with fresh parsley before serving.
