Ingredients

Olive oil
2 tablespoons
Hashbrowns
4 cups, frozen or fresh
Mushrooms
2 cups, sliced (button or cremini work well)
Swiss cheese
1 cup, shredded
Green onions
1/4 cup, chopped
Salt
to taste
Black pepper
to taste

Instructions

  1. In a large skillet, heat the olive oil over medium heat until shimmering.
  2. Add the hashbrowns to the skillet, spreading them evenly. Cook for about 10 minutes, without stirring, until they become crispy and golden brown on the bottom.
  3. Carefully flip the hashbrowns using a spatula and continue to cook for another 5 minutes until the other side is also crispy.
  4. Add the sliced mushrooms to the skillet and stir gently to combine. Cook for about 5 minutes, or until the mushrooms are soft and browned.
  5. Season the mixture with salt and pepper to taste.
  6. Sprinkle the shredded Swiss cheese evenly over the hashbrowns and mushrooms.
  7. Cover the skillet with a lid and cook for an additional 5 minutes, or until the cheese is melted and bubbly.
  8. Remove from heat and garnish with chopped green onions before serving hot.
