Ingredients
- Olive oil
- 2 tablespoons
- Hashbrowns
- 4 cups, frozen or fresh
- Mushrooms
- 2 cups, sliced (button or cremini work well)
- Swiss cheese
- 1 cup, shredded
- Green onions
- 1/4 cup, chopped
- Salt

- Black pepper

Instructions
- In a large skillet, heat the olive oil over medium heat until shimmering.
- Add the hashbrowns to the skillet, spreading them evenly. Cook for about 10 minutes, without stirring, until they become crispy and golden brown on the bottom.
- Carefully flip the hashbrowns using a spatula and continue to cook for another 5 minutes until the other side is also crispy.
- Add the sliced mushrooms to the skillet and stir gently to combine. Cook for about 5 minutes, or until the mushrooms are soft and browned.
- Season the mixture with salt and pepper to taste.
- Sprinkle the shredded Swiss cheese evenly over the hashbrowns and mushrooms.
- Cover the skillet with a lid and cook for an additional 5 minutes, or until the cheese is melted and bubbly.
- Remove from heat and garnish with chopped green onions before serving hot.
