
Mushroom and Tomato Pasta
This delicious mushroom and tomato pasta is a quick and easy dish that is packed with flavor.
Ingredients
- Parmesan cheese (1/4 cup, grated)
- Salt and pepper (to taste)
- Fresh basil (1/4 cup, chopped)
- Tomatoes (2 cups, diced)
- Mushrooms (8 ounces, sliced)
- Garlic (3 cloves, minced)
- Olive oil (2 tablespoons)
- Pasta (8 ounces)
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- Heat the olive oil in a large skillet over medium heat.
- Add the minced garlic and cook for 1 minute, until fragrant.
- Add the sliced mushrooms and cook until they release their moisture and start to brown, about 5 minutes.
- Add the diced tomatoes and cook for another 5 minutes, until the tomatoes are softened.
- Season with salt and pepper to taste.
- Add the cooked pasta to the skillet and toss to coat it with the mushroom and tomato mixture.
- Remove from heat and stir in the chopped fresh basil.
