Servings: 8

Ingredients

  • All-purpose flour (2 cups)
  • Granulated sugar (3/4 cup, divided)
  • Baking powder (1 teaspoon)
  • Salt (1/4 teaspoon)
  • Unsalted butter (1/2 cup (cold, cubed))
  • Egg (1 (large))
  • Vanilla extract (1 teaspoon)
  • Blueberries (2 cups (fresh or frozen))
  • Lemon juice (1 tablespoon)
  • Cornstarch (2 tablespoons)
  • Powdered sugar (for dusting, optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine the all-purpose flour, 1/2 cup of granulated sugar, baking powder, and salt.
  3. Add the cold, cubed unsalted butter to the dry ingredients. Using a pastry cutter or your fingers, cut the butter into the flour mixture until it resembles coarse crumbs.
  4. In a small bowl, whisk together the egg and vanilla extract. Pour the egg mixture into the flour mixture and mix until the dough just comes together.
  5. Press approximately two-thirds of the dough into the bottom and up the sides of a greased 9-inch (23 cm) pie dish to form the crust.
  6. In a separate bowl, gently toss the blueberries with lemon juice and cornstarch until well coated.
  7. Spread the blueberry mixture evenly over the crust, ensuring even distribution.
  8. Crumble the remaining dough over the top of the blueberries, creating a rustic topping.
  9. Bake in the preheated oven for 35-40 minutes, or until the crust is golden brown and the blueberries are bubbling.
  10. Remove from the oven and let cool for at least 15 minutes before serving.
  11. Dust with powdered sugar just before serving, if desired.
