Servings: 8
Ingredients
- All-purpose flour (2 cups)
- Granulated sugar (3/4 cup, divided)
- Baking powder (1 teaspoon)
- Salt (1/4 teaspoon)
- Unsalted butter (1/2 cup (cold, cubed))
- Egg (1 (large))
- Vanilla extract (1 teaspoon)
- Blueberries (2 cups (fresh or frozen))
- Lemon juice (1 tablespoon)
- Cornstarch (2 tablespoons)
- Powdered sugar (for dusting, optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine the all-purpose flour, 1/2 cup of granulated sugar, baking powder, and salt.
- Add the cold, cubed unsalted butter to the dry ingredients. Using a pastry cutter or your fingers, cut the butter into the flour mixture until it resembles coarse crumbs.
- In a small bowl, whisk together the egg and vanilla extract. Pour the egg mixture into the flour mixture and mix until the dough just comes together.
- Press approximately two-thirds of the dough into the bottom and up the sides of a greased 9-inch (23 cm) pie dish to form the crust.
- In a separate bowl, gently toss the blueberries with lemon juice and cornstarch until well coated.
- Spread the blueberry mixture evenly over the crust, ensuring even distribution.
- Crumble the remaining dough over the top of the blueberries, creating a rustic topping.
- Bake in the preheated oven for 35-40 minutes, or until the crust is golden brown and the blueberries are bubbling.
- Remove from the oven and let cool for at least 15 minutes before serving.
- Dust with powdered sugar just before serving, if desired.
