Naengmyeon (Korean Cold Noodles)

Naengmyeon is a traditional Korean delicacy that embodies the essence of summer with its refreshing and tangy flavors. Served chilled, these chewy buckwheat noodles are bathed in a savory beef broth that is both invigorating and satisfying. Topped with vibrant vegetables such as crisp cucumber, crunchy radish, and sweet Asian pear, along with a perfectly boiled egg, this dish is not only a feast for the palate but also for the eyes. With roots tracing back to the Joseon Dynasty, naengmyeon was originally enjoyed by the elite during the hot summer months, symbolizing comfort and simplicity in Korean cuisine. Its unique harmony of textures and flavors will leave you longing for more, making it a quintessential dish for any occasion.

Ingredients

Buckwheat noodles
8 ounces (about 225 grams)
Beef broth (homemade or store-bought)
4 cups
Vinegar (preferably apple cider or rice vinegar)
2 tablespoons
Soy sauce
2 tablespoons
Sugar
1 tablespoon
Mustard (Korean mustard or yellow mustard)
1 teaspoon
Ice cubes
as needed for serving
Sesame seeds (toasted)
1 tablespoon
Pickled radish (for garnish)
1 cup, cut into strips
Boiled egg
2, halved
Asian pear
1, thinly sliced
Radish
1 small, thinly sliced
Cucumber
1, julienned

Instructions

  1. Cook the buckwheat noodles according to the package instructions. Once cooked, drain and rinse under cold water to stop the cooking process and cool them down.
  2. In a large mixing bowl, combine the beef broth, vinegar, soy sauce, sugar, and mustard. Whisk together until the sugar is dissolved and the mixture is well blended.
  3. Place the cooled noodles into the broth mixture and let them soak for about 5 minutes to absorb the flavors.
  4. Divide the noodles among serving bowls and artfully arrange the cucumber, radish, Asian pear slices, boiled egg halves, and pickled radish on top.
  5. Sprinkle the toasted sesame seeds over the noodles and toppings for added flavor and crunch.
  6. Add ice cubes to the serving bowls to keep the dish refreshingly cold.
  7. Before eating, mix the noodles and toppings together to combine the flavors, and enjoy!

Tips

  • 💡 For an extra kick, consider adding a dollop of gochujang (Korean chili paste) to your broth mixture.
  • 💡 You can substitute the beef broth with a vegetable broth for a lighter, vegetarian version.
  • 💡 Feel free to customize the toppings based on your preferences; shredded carrots and sliced kimchi also make great additions.
