Olive oil
2 tablespoons
Onion
1 medium, finely chopped
Garlic
2 cloves, minced
Spinach
4 cups, fresh, chopped
Eggs
4 large
Turmeric
1/2 teaspoon
Salt
1/2 teaspoon, or to taste
Black pepper
1/4 teaspoon, or to taste

Instructions

  1. Heat the olive oil in a large skillet over medium heat.
  2. Add the chopped onion and sauté until translucent, about 5-7 minutes.
  3. Stir in the minced garlic and cook for an additional minute until fragrant.
  4. Add the chopped spinach to the pan, stirring well. Cook until the spinach is wilted and tender, approximately 3-4 minutes.
  5. In a separate bowl, beat the eggs with turmeric, salt, and black pepper until well combined.
  6. Pour the beaten eggs over the spinach mixture in the skillet, ensuring even coverage.
  7. Allow the eggs to cook undisturbed for a couple of minutes, then gently stir to combine with the spinach, cooking until the eggs are just set, about 4-5 minutes.
  8. Remove from heat and serve hot, ideally with warm bread and a side of yogurt.
