- Bread slices
- 4 thick slices (preferably brioche or challah)
- Eggs
- 2 large
- Milk
- 1/2 cup (whole or your choice of milk)
- Vanilla extract
- 1 teaspoon
- Cinnamon
- 1 teaspoon
- Nectarines
- 2, pitted and sliced
- Apricots
- 2, pitted and sliced
- Maple syrup
- to taste, for drizzling
- Powdered sugar
- for dusting
- Unsalted butter
- 2 tablespoons, for cooking
Instructions
- In a shallow bowl, whisk together the eggs, milk, vanilla extract, and cinnamon until well combined.
- Preheat a non-stick skillet or griddle over medium heat and add 1 tablespoon of butter, allowing it to melt and coat the surface.
- Dip each slice of bread into the egg mixture, ensuring both sides are well coated. Allow excess mixture to drip off.
- Place the dipped bread slices onto the skillet and cook for about 2-3 minutes on each side, or until golden brown and cooked through. Repeat with remaining slices, adding more butter as needed.
- Once the French toast is cooked, remove it from the skillet and set aside on a warm plate.
- In the same skillet, add the sliced nectarines and apricots. Cook for 2-3 minutes, stirring gently, until they are slightly softened and caramelized.
- Serve the French toast topped with the warm nectarines and apricots. Drizzle with maple syrup and dust with powdered sugar before serving.
