Nectarine and Apricot French Toast

Indulge in a delightful breakfast experience with this Nectarine and Apricot French Toast. This dish features golden-brown, fluffy French toast made from thick slices of bread, lovingly dipped in a rich egg and milk mixture infused with cinnamon and vanilla. Topped with warm, caramelized nectarines and apricots, this breakfast is a celebration of summer fruits, drizzled with pure maple syrup for that perfect touch of sweetness. Historically a staple of French cuisine, French toast has roots that date back to ancient Rome, where bread was soaked in a milk and egg mixture, making it a timeless treat enjoyed across cultures.

Servings: 4

Ingredients

  • Bread slices (4 thick slices (preferably brioche or challah))
  • Eggs (2 large)
  • Milk (1/2 cup (whole or your choice of milk))
  • Vanilla extract (1 teaspoon)
  • Cinnamon (1 teaspoon)
  • Nectarines (2, pitted and sliced)
  • Apricots (2, pitted and sliced)
  • Maple syrup (to taste, for drizzling)
  • Powdered sugar (for dusting)
  • Unsalted butter (2 tablespoons, for cooking)

Instructions

  1. In a shallow bowl, whisk together the eggs, milk, vanilla extract, and cinnamon until well combined.
  2. Preheat a non-stick skillet or griddle over medium heat and add 1 tablespoon of butter, allowing it to melt and coat the surface.
  3. Dip each slice of bread into the egg mixture, ensuring both sides are well coated. Allow excess mixture to drip off.
  4. Place the dipped bread slices onto the skillet and cook for about 2-3 minutes on each side, or until golden brown and cooked through. Repeat with remaining slices, adding more butter as needed.
  5. Once the French toast is cooked, remove it from the skillet and set aside on a warm plate.
  6. In the same skillet, add the sliced nectarines and apricots. Cook for 2-3 minutes, stirring gently, until they are slightly softened and caramelized.
  7. Serve the French toast topped with the warm nectarines and apricots. Drizzle with maple syrup and dust with powdered sugar before serving.
