Bread slices
4 thick slices (preferably brioche or challah)
Eggs
2 large
Milk

Vanilla extract

Cinnamon

Nectarines
2, pitted and sliced
Apricots
2, pitted and sliced
Maple syrup
to taste, for drizzling
Powdered sugar
for dusting
Unsalted butter
2 tablespoons, for cooking

Instructions

  1. In a shallow bowl, whisk together the eggs, milk, vanilla extract, and cinnamon until well combined.
  2. Preheat a non-stick skillet or griddle over medium heat and add 1 tablespoon of butter, allowing it to melt and coat the surface.
  3. Dip each slice of bread into the egg mixture, ensuring both sides are well coated. Allow excess mixture to drip off.
  4. Place the dipped bread slices onto the skillet and cook for about 2-3 minutes on each side, or until golden brown and cooked through. Repeat with remaining slices, adding more butter as needed.
  5. Once the French toast is cooked, remove it from the skillet and set aside on a warm plate.
  6. In the same skillet, add the sliced nectarines and apricots. Cook for 2-3 minutes, stirring gently, until they are slightly softened and caramelized.
