Nectarine and Apricot Jam

Ingredients
- Nectarines
- 4 cups, chopped (about 6-8 ripe nectarines)
- Apricots
- 4 cups, chopped (about 10-12 ripe apricots)
- Granulated sugar
- 4 cups
- Lemon juice
- 1/4 cup, freshly squeezed
- Pectin
- 1 package (1.75 oz or as directed on package)
Instructions
- Sterilize your jars and lids by boiling them in water for 10 minutes, then let them air dry.
- In a large pot, combine the chopped nectarines, chopped apricots, granulated sugar, and freshly squeezed lemon juice. Stir the mixture well to evenly distribute the sugar.
- Cook over medium heat, stirring occasionally, until the fruits soften and the mixture thickens, approximately 30 minutes. Keep an eye on the mixture to prevent sticking.
- Stir in the pectin and continue cooking for an additional 5 minutes, stirring constantly to ensure it doesn’t stick to the bottom.
- Once the mixture has thickened to your desired consistency, remove from heat and let the jam cool for a few minutes.
- Transfer the hot jam to the sterilized jars, leaving about 1/4 inch of headspace at the top. Seal the jars tightly with the sterilized lids.
- Allow the jam to cool completely at room temperature before storing it in the refrigerator or processing it in a water bath for long-term storage.
