A feast for the eyes and the palate, this salsa is sure to be the star of your summer spread.
Servings: 4
Ingredients
- Jalapeno pepper (1, finely diced)
- Black pepper (1/4 teaspoon, freshly ground)
- Salt (1/2 teaspoon)
- Lime juice (juice of 1 lime)
- Fresh cilantro (1/4 cup, finely chopped)
- Red onion (1/2 cup, finely diced)
- Apricots (1 cup, pitted and diced)
- Nectarines (1 cup, pitted and diced)
Instructions
- In a medium-sized bowl, add the finely diced nectarines, apricots, red onion, and jalapeno pepper.
- Next, sprinkle in the freshly ground black pepper and salt.
- Drizzle over the freshly squeezed lime juice, ensuring all ingredients get an even coating.
- Add the finely chopped cilantro and give everything a good stir until all the ingredients are well combined.
- Cover the bowl with a lid or cling film and refrigerate for at least 30 minutes. This resting time allows the flavors to marry and intensify, resulting in a more flavorful salsa.
- Serve this refreshing salsa as a topping for grilled chicken or fish. Alternatively, enjoy it as an appetizer with tortilla chips. For an added twist, try it in a fresh salad or as a filling in tacos.
