Ingredients

Original recipe serves 4

Jalapeno pepper
1, finely diced
Black pepper
1/4 teaspoon, freshly ground
Salt
1/2 teaspoon
Lime juice
juice of 1 lime
Fresh cilantro
1/4 cup, finely chopped
Red onion
1/2 cup, finely diced
Apricots
1 cup, pitted and diced
Nectarines
1 cup, pitted and diced

Instructions

  1. In a medium-sized bowl, add the finely diced nectarines, apricots, red onion, and jalapeno pepper.
  2. Next, sprinkle in the freshly ground black pepper and salt.
  3. Drizzle over the freshly squeezed lime juice, ensuring all ingredients get an even coating.
  4. Add the finely chopped cilantro and give everything a good stir until all the ingredients are well combined.
  5. Cover the bowl with a lid or cling film and refrigerate for at least 30 minutes. This resting time allows the flavors to marry and intensify, resulting in a more flavorful salsa.
  6. Serve this refreshing salsa as a topping for grilled chicken or fish. Alternatively, enjoy it as an appetizer with tortilla chips. For an added twist, try it in a fresh salad or as a filling in tacos.
