Nectarine and Apricot Salsa

Ingredients

  • Jalapeno pepper (1, finely diced)
  • Black pepper (1/4 teaspoon, freshly ground)
  • Salt (1/2 teaspoon)
  • Lime juice (juice of 1 lime)
  • Fresh cilantro (1/4 cup, finely chopped)
  • Red onion (1/2 cup, finely diced)
  • Apricots (1 cup, pitted and diced)
  • Nectarines (1 cup, pitted and diced)

Instructions

  1. In a medium-sized bowl, add the finely diced nectarines, apricots, red onion, and jalapeno pepper.
  2. Next, sprinkle in the freshly ground black pepper and salt.
  3. Drizzle over the freshly squeezed lime juice, ensuring all ingredients get an even coating.
  4. Add the finely chopped cilantro and give everything a good stir until all the ingredients are well combined.
  5. Cover the bowl with a lid or cling film and refrigerate for at least 30 minutes. This resting time allows the flavors to marry and intensify, resulting in a more flavorful salsa.
