Nectarine and Blueberry Cobbler

Vanilla extract
1 teaspoon
Milk
1/2 cup
Unsalted butter, cold and cubed
1/2 cup
Salt
1/2 teaspoon
Baking powder
1 teaspoon
Granulated sugar
1 cup, divided
All-purpose flour
1 cup
Lemon juice
1 tablespoon
Cornstarch
2 tablespoons
Blueberries
2 cups
Nectarines, sliced
2 cups

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the sliced nectarines, blueberries, 1/2 cup of granulated sugar, cornstarch, and lemon juice. Mix until the fruit is well coated. Transfer the mixture to a 9x9-inch baking dish.
  3. In a separate bowl, whisk together the flour, remaining 1/2 cup of granulated sugar, baking powder, and salt.
  4. Add the cold, cubed butter to the flour mixture. Use a pastry cutter or your fingers to cut the butter into the dry ingredients until the mixture resembles coarse crumbs.
  5. Pour in the milk and vanilla extract to the flour and butter mixture. Stir until just combined. Be careful not to overmix.
  6. Spoon the cobbler dough evenly over the fruit mixture in the baking dish. Don't worry if there are some fruit peeking through, it adds to the rustic charm of the dish.
  7. Bake for 35-40 minutes, or until the fruit is bubbly and the cobbler topping is a golden brown.
