Ingredients
- Unsalted butter
- 1/2 cup, cold and cubed
- Salt
- 1/4 teaspoon
- Cinnamon
- 1 teaspoon
- Brown sugar
- 1/2 cup, packed
- Rolled oats
- 1 cup
- All-purpose flour
- 1/2 cup
- Cornstarch
- 1 tablespoon
- Granulated sugar
- 1/4 cup
- Lemon juice
- 1 tablespoon
- Blueberries
- 2 cups, fresh
- Nectarines
- 4, pitted and sliced
Instructions
- Preheat your oven to 375°F (190°C).
- In a large mixing bowl, combine the sliced nectarines, fresh blueberries, lemon juice, granulated sugar, and cornstarch. Toss the fruit gently until everything is well coated.
- Carefully transfer the fruit mixture into a 9-inch square baking dish, spreading it evenly across the bottom.
- In a separate bowl, mix together the all-purpose flour, rolled oats, brown sugar, cinnamon, and salt until well combined.
- Add the cold, cubed unsalted butter to the flour mixture. Using your fingers or a pastry cutter, cut the butter into the dry ingredients until the mixture resembles coarse crumbs.
- Evenly sprinkle the oat topping over the fruity mixture in the baking dish.
- Bake in the preheated oven for 35-40 minutes, or until the fruit is bubbling and the topping is a beautiful golden brown.
- Once baked, remove from the oven and allow to cool for a few minutes before serving.
- Serve warm, with a scoop of vanilla ice cream or a dollop of whipped cream on top for an extra indulgent treat.
Tips
- For added texture, consider mixing in some chopped nuts, such as pecans or almonds, into the oat topping.
- If nectarines are not available, you can substitute with peaches for a similar delicious outcome.
- For a gluten-free option, replace all-purpose flour with a gluten-free flour blend.
