Summer Harvest Nectarine and Plum Jam

Ingredients
- Nectarines
- 3 cups, pitted and chopped
- Plums
- 3 cups, pitted and chopped
- Granulated sugar
- 2 cups
- Fresh lemon juice
- 1/4 cup
- Fruit pectin
- 1 package (1.75 ounces)
Instructions
- In a large, heavy-bottomed pot, combine the chopped nectarines, plums, sugar, and lemon juice. Stir well to combine.
- Place the pot over medium heat and cook, stirring frequently, until the fruits are soft and the sugar has completely dissolved. This should take about 30 minutes.
- Add the pectin to the pot, stirring well to ensure it's fully incorporated.
- Continue to cook the fruit mixture for an additional 5 minutes, or until the jam has thickened to your liking.
- Remove the pot from the heat and allow the jam to cool for 10 minutes.
- While the jam is cooling, prepare your jars by sterilizing them in boiling water.
- Carefully ladle the jam into the sterilized jars, leaving about a 1/4 inch of headspace at the top. Seal the jars tightly.
- Allow the jars to cool completely at room temperature before storing them in the refrigerator.
