Ingredients

Original recipe serves 4

All-purpose flour
2 cups
Baking powder
1 tablespoon
Salt
1/2 teaspoon
Sugar
2 tablespoons
Milk
1 1/2 cups
Egg
1
Unsalted butter, melted
2 tablespoons
Nectarines, diced
2
Plums, diced
2
Maple syrup
to serve

Instructions

  1. In a large bowl, whisk together the all-purpose flour, baking powder, salt, and sugar.
  2. In a separate bowl, whisk the milk, egg, and melted butter until well combined.
  3. Gradually pour the wet ingredients into the bowl with the dry ingredients, stirring gently until just combined. Avoid overmixing to keep the pancakes fluffy.
  4. Fold in the diced nectarines and plums into the batter, distributing them evenly.
  5. Preheat a non-stick skillet or griddle over medium heat.
  6. Pour 1/4 cup of batter onto the skillet for each pancake. Allow ample space between each one to prevent them from merging together.
  7. Cook until bubbles form on the surface of the pancake, then flip using a spatula, and cook for another 1-2 minutes until golden brown.
  8. Repeat the process with the remaining batter.
  9. Serve the pancakes warm, drizzled with maple syrup. Enjoy!
