Ingredients

- Nectarines, diced

- Plums, diced

Instructions
- In a large bowl, whisk together the all-purpose flour, baking powder, salt, and sugar.
- In a separate bowl, whisk the milk, egg, and melted butter until well combined.
- Gradually pour the wet ingredients into the bowl with the dry ingredients, stirring gently until just combined. Avoid overmixing to keep the pancakes fluffy.
- Fold in the diced nectarines and plums into the batter, distributing them evenly.
- Preheat a non-stick skillet or griddle over medium heat.
- Pour 1/4 cup of batter onto the skillet for each pancake. Allow ample space between each one to prevent them from merging together.
- Cook until bubbles form on the surface of the pancake, then flip using a spatula, and cook for another 1-2 minutes until golden brown.
- Repeat the process with the remaining batter.
