Nectarine and Plum Pancakes

All-purpose flour

Baking powder

Salt

2 tablespoons
Milk
1 1/2 cups
Egg

Nectarines, diced

Instructions

  1. In a large bowl, whisk together the all-purpose flour, baking powder, salt, and sugar.
  2. In a separate bowl, whisk the milk, egg, and melted butter until well combined.
  3. Gradually pour the wet ingredients into the bowl with the dry ingredients, stirring gently until just combined. Avoid overmixing to keep the pancakes fluffy.
  4. Fold in the diced nectarines and plums into the batter, distributing them evenly.
  5. Preheat a non-stick skillet or griddle over medium heat.
  6. Pour 1/4 cup of batter onto the skillet for each pancake. Allow ample space between each one to prevent them from merging together.
