Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the sliced nectarines, raspberries, 3/4 cup of granulated sugar, cornstarch, and lemon juice. Toss gently to coat the fruit evenly.
- Transfer the fruit mixture to a 9x9-inch baking dish, spreading it out evenly.
- In a separate bowl, whisk together the flour, remaining 1/4 cup of granulated sugar, baking powder, and salt until combined.
- Add the cold cubed butter to the flour mixture. Use a pastry cutter or your fingers to cut the butter into the flour until the mixture resembles coarse crumbs.
- Pour the milk and vanilla extract into the flour mixture. Stir gently until just combined, taking care not to overmix.
