Ingredients

Original recipe serves 4

Vanilla extract
1 teaspoon
Lemon juice
1 tablespoon
Granulated sugar
1/2 cup
Fresh raspberries
1 cup
Nectarines
4, pitted and sliced

Instructions

  1. Combine the sliced nectarines, fresh raspberries, granulated sugar, lemon juice, and vanilla extract in a medium-sized saucepan.
  2. Place the saucepan over a medium heat, stirring occasionally to help the sugar dissolve without burning the fruits.
  3. Let the mixture simmer for about 10-15 minutes, until the fruits are soft and the compote has thickened to your liking.
  4. Remove the saucepan from the heat and allow the compote to cool down for a few minutes.
  5. You can serve the compote while it's still warm, or let it chill in the refrigerator before serving. Enjoy as is, or use it to top your favorite yogurt, pancakes, or toast.
