Nectarine and Raspberry Popsicles
Beat the summer heat with these delightful Nectarine and Raspberry Popsicles. An irresistible blend of juicy nectarines and tart raspberries, sweetened with a touch of honey and a splash of refreshing lemon. The recipe dates back to the early 1900s when the first popsicles, then called 'Epsicles', were invented by an 11-year-old boy in the United States.
Ingredients
- 1/2 cup Water
- 1 tablespoon Lemon juice
- 3 tablespoons Honey
- 1 cup Raspberries
- 2, pitted and chopped Nectarines

Instructions
- In a blender, combine the chopped nectarines, raspberries, honey, lemon juice, and water.
- Blend until the mixture is smooth and well combined. If you prefer a chunkier texture, blend less.
- Pour the fruit mixture into popsicle molds. You can use any shape or size of mold you like.
- Carefully insert popsicle sticks into the center of the molds.
- Freeze the molds for at least 4 hours, or until the popsicles are completely frozen.
- To remove the popsicles from the molds, run them under warm water for a few seconds. Then, gently pull on the stick to release the popsicle.
- Serve immediately for a cool, refreshing treat! Store any leftovers in the freezer.
Tips
- Feel free to swap out the fruits for others you have on hand. Just keep the total amount the same for best results.
- If your fruit is very ripe and sweet, you may want to reduce the amount of honey.
