Nectarine French Toast

Indulge in a delightful breakfast with this Nectarine French Toast, where golden-brown bread is luxuriously soaked in a creamy egg mixture infused with cinnamon and vanilla. Topped with warm, caramelized nectarines, this dish offers a perfect balance of sweetness and warmth, making it a lovely start to any day. The combination of flavors is reminiscent of lazy summer mornings, where the sweetness of fresh nectarines is in full bloom, bringing a taste of sunshine to your table.

Serves 2

Ingredients

Bread slices
4 slices (thick-cut, such as brioche or challah)
Eggs
2 large
Milk
1/2 cup
Vanilla extract
1 teaspoon
Cinnamon
1 teaspoon
Butter
2 tablespoons
Nectarines
2, pitted and sliced
Maple syrup
to taste
Powdered sugar
for dusting

Instructions

  1. In a shallow bowl, whisk together the eggs, milk, vanilla extract, and cinnamon until well combined.
  2. Dip each bread slice into the egg mixture, allowing it to soak for a few seconds on each side to absorb the flavors.
  3. Heat a large skillet or griddle over medium heat and melt 1 tablespoon of butter.
  4. Place the soaked bread slices onto the skillet and cook until golden brown on each side, about 2-3 minutes per side. Remove the cooked French toast from the skillet and set aside.
  5. In the same skillet, melt the remaining tablespoon of butter and add the sliced nectarines.
  6. Cook the nectarines for 2-3 minutes, stirring gently, until they are slightly softened and caramelized.
  7. Serve the French toast topped with the warm nectarines.
  8. Drizzle with maple syrup and dust with powdered sugar before serving. Enjoy your delicious Nectarine French Toast!

Tips

  • 💡 For a richer flavor, use brioche or challah bread, which will hold the egg mixture better and add a lovely sweetness.
  • 💡 You can also swap nectarines for peaches or plums for a different fruity twist.
  • 💡 Add a pinch of nutmeg for a warm, spiced flavor that complements the cinnamon beautifully.
