Caramelized Nectarine Upside Down Cake

Experience the symphony of flavors with our Caramelized Nectarine Upside Down Cake. The recipe features a tantalizing layer of juicy, sun-ripened nectarines caramelized to perfection in a rich brown sugar glaze, topped with a moist, fluffy vanilla-infused cake. This dessert is a delightful tribute to the classic Pineapple Upside Down Cake, which gained popularity in the early 20th century when canned pineapples became widely accessible. Its nectarine variation brings a unique twist, celebrating the succulent sweetness of this summer fruit.

Servings: 8

Ingredients

  • Milk (1 cup)
  • Vanilla extract (1 teaspoon)
  • Eggs (3)
  • Unsalted butter, softened (1/2 cup)
  • Granulated sugar (1 cup)
  • Salt (1/2 teaspoon)
  • Baking powder (1 teaspoon)
  • All-purpose flour (2 cups)
  • Brown sugar (1/2 cup)
  • Unsalted butter (1/2 cup)
  • Nectarines (5-6, sliced)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a 9-inch round cake pan, melt 1/2 cup of unsalted butter over medium heat.
  3. Evenly sprinkle the brown sugar over the melted butter.
  4. Arrange the sliced nectarines on top of the brown sugar in a single layer. Set the pan aside.
  5. In a large mixing bowl, combine the all-purpose flour, baking powder, and salt. Whisk together until well mixed.
  6. In a separate bowl, cream together the softened unsalted butter and granulated sugar until the mixture is light and fluffy.
  7. Add the eggs to the butter and sugar mixture one at a time, beating well after each addition. Stir in the vanilla extract.
  8. Gradually add the dry ingredients to the wet mixture, alternating with the milk. Mix until the ingredients are just combined to create a smooth batter.
  9. Pour the batter over the arranged nectarines in the cake pan, spreading it evenly.
  10. Bake the cake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  11. Remove the cake from the oven and let it cool in the pan for about 10 minutes.
  12. Place a serving plate upside down on top of the cake pan, then carefully flip the cake onto the plate. Ensure the cake is centered.
  13. Gently lift off the cake pan, revealing the beautifully caramelized nectarines on top.
  14. Allow the cake to cool completely before slicing and serving. Enjoy!
