Caramelized Nectarine Upside Down Cake
Experience the symphony of flavors with our Caramelized Nectarine Upside Down Cake. The recipe features a tantalizing layer of juicy, sun-ripened nectarines caramelized to perfection in a rich brown sugar glaze, topped with a moist, fluffy vanilla-infused cake. This dessert is a delightful tribute to the classic Pineapple Upside Down Cake, which gained popularity in the early 20th century when canned pineapples became widely accessible. Instructions
- Preheat the oven to 350°F (175°C).
- In a 9-inch round cake pan, melt 1/2 cup of unsalted butter over medium heat.
- Evenly sprinkle the brown sugar over the melted butter.
- Arrange the sliced nectarines on top of the brown sugar in a single layer. Set the pan aside.
- In a large mixing bowl, combine the all-purpose flour, baking powder, and salt. Whisk together until well mixed.
- In a separate bowl, cream together the softened unsalted butter and granulated sugar until the mixture is light and fluffy.
- Add the eggs to the butter and sugar mixture one at a time, beating well after each addition. Stir in the vanilla extract.
- Gradually add the dry ingredients to the wet mixture, alternating with the milk. Mix until the ingredients are just combined to create a smooth batter.
- Pour the batter over the arranged nectarines in the cake pan, spreading it evenly.
- Bake the cake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
- Remove the cake from the oven and let it cool in the pan for about 10 minutes.
- Place a serving plate upside down on top of the cake pan, then carefully flip the cake onto the plate. Ensure the cake is centered.
- Gently lift off the cake pan, revealing the beautifully caramelized nectarines on top.
- Allow the cake to cool completely before slicing and serving. Enjoy!
Tips
- For a gluten-free version, substitute all-purpose flour with a gluten-free flour blend. You can also try using peaches or plums instead of nectarines for a different flavor.
