Ingredients
- Sushi rice
- 2 cups
- Water
- 2 1/2 cups
- Rice vinegar
- 1/4 cup
- Sugar
- 2 tablespoons
- Salt
- 1 teaspoon
- Fresh fish (tuna, salmon, etc.)
- 8 ounces, sliced thinly
- Wasabi

Instructions
- Begin by rinsing the sushi rice under cold water until the water runs clear, which removes excess starch and helps achieve the perfect texture.
- Combine the rinsed sushi rice and water in a rice cooker and cook according to the manufacturer's instructions. If you don't have a rice cooker, you can use a pot: bring the water to a boil, then reduce the heat to low, cover, and simmer for 18-20 minutes.
- While the rice is cooking, prepare the sushi vinegar mixture. In a small saucepan over medium heat, combine rice vinegar, sugar, and salt. Stir gently until the sugar and salt dissolve completely, then remove from heat and let cool.
- Once the rice is cooked, transfer it to a large bowl. Gently fold in the cooled vinegar mixture using a wooden spatula, being careful not to mash the rice. Allow the rice to cool to room temperature, ideally fanning it to achieve a glossy finish.
- With wet hands to prevent sticking, take a small ball of rice (about the size of a tablespoon) and shape it into a firm, oblong mound.
- Take a slice of fresh fish and spread a small amount of wasabi on it. Place the fish slice on top of the rice ball, pressing gently to adhere.
- Repeat the process with the remaining rice and fish slices, arranging them on a serving platter.
