Instructions
- In a large pot, bring 10 cups of water to a boil over medium-high heat.
- Once boiling, add the beef shank chunks. Lower the heat to a simmer and cook for about 1 hour, or until the beef is tender. Skim off any impurities that rise to the surface to keep the broth clear.
- Add the quartered onion and crushed garlic to the pot. Allow them to simmer with the beef for an additional 30 minutes to infuse the broth with flavor.
- After 30 minutes, introduce the cubed potatoes and sliced carrots. Cook for 10 minutes or until the vegetables are tender.
- Stir in the chopped cabbage and bok choy, cooking for another 5 minutes until the greens are wilted and tender.
- Season the soup with fish sauce, salt, and black pepper to taste, adjusting as necessary to suit your preference.
- Remove the pot from heat and let it sit for a few minutes before serving.
- Serve hot, garnished with additional vegetables if desired, alongside steamed rice for a complete meal.
Tips
- For a richer flavor, consider browning the beef shank in a bit of oil before adding water.
- Feel free to add other vegetables such as corn or green beans for extra nutrients and flavor.
- If you prefer a spicier kick, add some sliced green chilies during the cooking process.
