Nopal Coffee Tonic
A unique and invigorating coffee tonic that blends the bold flavors of coffee with the subtle earthiness of nopal cactus. This drink is as refreshing as it is energizing, providing a delightful pick-me-up at any time of the day. The addition of fresh mint, a hint of lime, and a touch of honey creates a harmonious balance of flavors that is truly irresistible.

Ingredients
- Nopal cactus
- 1/2 cup, diced
- Espresso or strong brewed coffee
- 1 shot
- Sparkling water
- 1 cup
- Lime juice
- 1 tablespoon
- Honey
- 1 tablespoon
- Ice cubes

- Mint leaves
- for garnish
Instructions
- Prepare a glass and place the diced nopal cactus inside. Using a muddler or the back of a spoon, crush the cactus to release its juices.
- Pour the shot of espresso or strong brewed coffee into the glass, over the muddled cactus.
- Add in the sparkling water and lime juice, and stir the mixture.
- Add the honey, stirring until it is fully dissolved and the mixture is well combined.
- Toss in a handful of ice cubes to chill the drink.
- Garnish the glass with fresh mint leaves.
- Serve immediately and enjoy the refreshing burst of flavors!
