Nopal Coffee Tonic

This refreshing and energizing coffee tonic is infused with the goodness of nopal cactus.

Ingredients

  • Mint leaves (for garnish)
  • Ice cubes (handful)
  • Honey (1 teaspoon)
  • Lime juice (1 tablespoon)
  • Sparkling water (1/2 cup)
  • Coffee (1 shot of espresso or 1/2 cup of strong brewed coffee)
  • Nopal cactus (1 small pad, cleaned and diced)

Instructions

  1. In a glass, muddle the diced nopal cactus to release its juices.
  2. Add the shot of espresso or strong brewed coffee to the glass.
  3. Pour in the sparkling water and lime juice.
  4. Stir in the honey until well combined.
  5. Add a handful of ice cubes to the glass.
  6. Garnish with mint leaves.
  7. Serve and enjoy!
