Num Krok

Num Krok is a traditional Cambodian coconut rice pancake.

Ingredients

  • Vegetable oil (2 tablespoons)
  • Green onions (2, finely chopped)
  • Salt (1/2 teaspoon)
  • Sugar (2 tablespoons)
  • Coconut milk (1 cup)
  • Rice flour (1 cup)

Instructions

  1. In a mixing bowl, combine the rice flour, coconut milk, sugar, salt, and green onions. Mix well until smooth.
  2. Heat a non-stick pan over medium heat and add a small amount of vegetable oil.
  3. Pour a spoonful of the batter into the pan to form small pancakes. Cook for 2-3 minutes, or until the edges are golden brown.
  4. Flip the pancakes and cook for another 2-3 minutes on the other side.
  5. Repeat with the remaining batter.
  6. Serve the Num Krok warm as an appetizer or snack.
