Ingredients
- Rice flour
- 1 cup
- Coconut milk
- 1 cup
- Sugar
- 1 tablespoon
- Salt
- 1/4 teaspoon
- Green onions
- 1/4 cup, finely chopped
- Vegetable oil
- for frying
Instructions
- In a mixing bowl, combine the rice flour, coconut milk, sugar, salt, and finely chopped green onions. Mix well until the batter is smooth and free of lumps.
- Heat a non-stick pan or a special Num Krok pan over medium heat. Lightly grease the surface with vegetable oil.
- Pour a spoonful of the batter into each mold or into the pan to form small pancakes. Cook for 2-3 minutes, or until the edges turn golden brown and the tops are set.
- Carefully flip the pancakes using a spatula and cook for another 2-3 minutes on the other side until golden brown.
- Once cooked, remove the pancakes from the pan and place them on a serving platter.
- Repeat the process with the remaining batter, adding more oil as needed.
- Serve the Num Krok warm, garnished with additional chopped green onions if desired.
