Okra Aemono is a delightful and vibrant Japanese side dish that celebrates the unique texture of tender okra, beautifully paired with a rich and nutty sesame dressing. This dish is not only visually appealing with its bright green color but also offers a harmonious balance of flavors, making it a perfect accompaniment to any meal. Traditionally enjoyed during the summer months in Japan, Okra Aemono showcases the versatility of okra, which is often underappreciated in many cuisines. Its nutty sesame dressing, combined with the crispness of the okra, creates a refreshing bite that is both nutritious and delicious. Serve it chilled for a cooling effect on warm days or alongside grilled meats and rice for a complete meal.

Servings: 4

Ingredients

Okra
2 cups, washed and trimmed
Salt
1 teaspoon (for boiling)
Sesame seeds
1/4 cup, toasted and ground
Soy sauce
2 tablespoons
Sugar
1 teaspoon
Additional salt
to taste
Ice cubes
for ice bath

Instructions

  1. Bring a pot of water to a boil and add 1 teaspoon of salt.
  2. Add the washed okra to the boiling water and cook for about 3-5 minutes, or until tender but still vibrant green. Avoid overcooking to maintain the okra's crispness.
  3. Drain the okra and immediately transfer it to an ice bath to stop the cooking process. Once cooled, cut the okra into bite-sized pieces.
  4. In a mixing bowl, combine the toasted and ground sesame seeds, soy sauce, sugar, and a pinch of salt. Adjust the salt to your preference.
  5. Add the cooled okra pieces to the bowl and gently mix until the okra is thoroughly coated in the sesame dressing.
  6. Cover and chill in the refrigerator for at least 30 minutes before serving. This allows the flavors to meld and enhances the dish's overall taste.
