Instructions
- Heat the vegetable oil in a large pan over medium heat.
- Add the finely chopped onion to the pan and sauté until it turns golden brown, this should take about 5 minutes.
- Stir in the minced garlic and grated ginger, cooking for another 2 minutes until the aromas are released.
- Incorporate the finely chopped tomatoes, turmeric powder, cumin powder, coriander powder, red chili powder, and salt. Allow this mixture to cook for about 5 minutes, stirring occasionally until the tomatoes soften and the spices meld together.
- Introduce the okra pieces to the pan, stirring thoroughly to ensure they are well-coated with the spiced tomato sauce. Cover the pan and let everything simmer for 10-15 minutes, or until the okra is tender and the flavors have fully absorbed.
- Finish the dish by garnishing with a generous sprinkle of chopped fresh cilantro. Serve hot and enjoy with fluffy basmati rice or warm naan bread for a truly immersive Indian dining experience.
Tips
- For a variation, add a diced bell pepper or a cup of peas to the curry for added texture and flavor.
- Be sure not to overcook the okra as it can become slimy. Cooking on medium heat and not covering the pan for too long helps prevent this.
