Fresh cilantro
a handful, roughly chopped
Vegetable oil
2 tablespoons
Salt
1 teaspoon, or to taste
Red chili powder
1/2 teaspoon
Coriander powder
1 teaspoon
Cumin powder
1/2 teaspoon
Turmeric powder
1/2 teaspoon
Tomatoes
2, large, finely chopped
Ginger
1 inch piece, grated
Garlic
2 cloves, minced
Onion
1, large, finely chopped
Okra
500 grams, cleaned and cut into pieces

Instructions

  1. Heat the vegetable oil in a large pan over medium heat.
  2. Add the finely chopped onion to the pan and sauté until it turns golden brown, this should take about 5 minutes.
  3. Stir in the minced garlic and grated ginger, cooking for another 2 minutes until the aromas are released.
  4. Incorporate the finely chopped tomatoes, turmeric powder, cumin powder, coriander powder, red chili powder, and salt. Allow this mixture to cook for about 5 minutes, stirring occasionally until the tomatoes soften and the spices meld together.
  5. Introduce the okra pieces to the pan, stirring thoroughly to ensure they are well-coated with the spiced tomato sauce. Cover the pan and let everything simmer for 10-15 minutes, or until the okra is tender and the flavors have fully absorbed.
  6. Finish the dish by garnishing with a generous sprinkle of chopped fresh cilantro. Serve hot and enjoy with fluffy basmati rice or warm naan bread for a truly immersive Indian dining experience.
