Ingredients

Potatoes
4 medium, boiled and diced
Carrots
2 medium, boiled and diced
Frozen peas
1 cup, thawed
Pickles
1/2 cup, diced
Hard-boiled eggs
3, chopped
Mayonnaise
1 cup
Dijon mustard
2 tablespoons
Salt
to taste
Black pepper
to taste
Fresh dill
2 tablespoons, chopped (for garnish)

Instructions

  1. In a large mixing bowl, combine the boiled and diced potatoes, diced carrots, thawed peas, diced pickles, and chopped hard-boiled eggs.
  2. In a separate small bowl, prepare the dressing by mixing together the mayonnaise, Dijon mustard, salt, and black pepper until smooth and creamy.
  3. Pour the dressing over the vegetable mixture and gently toss to coat all ingredients evenly without breaking the vegetables.
  4. Once combined, taste and adjust seasoning with additional salt and pepper if needed.
  5. Garnish the salad with fresh chopped dill for a burst of flavor and color.
