Olivier Salad

Olivier salad, also known as Russian salad, is a classic dish made with boiled potatoes, carrots, peas, pickles, and mayonnaise.

Ingredients

  • Fresh dill (2 tablespoons, chopped)
  • Salt and pepper (to taste)
  • Dijon mustard (1 tablespoon)
  • Mayonnaise (1/2 cup)
  • Hard (boiled eggs - 3, chopped)
  • Pickles (4 medium, diced)
  • Peas (1 cup, boiled)
  • Carrots (2 medium, boiled and diced)
  • Potatoes (3 large, boiled and diced)

Instructions

  1. In a large bowl, combine the boiled potatoes, carrots, peas, pickles, and chopped hard-boiled eggs.
  2. In a separate small bowl, mix together the mayonnaise, Dijon mustard, salt, and pepper.
  3. Pour the dressing over the salad ingredients and toss gently to coat everything evenly.
  4. Garnish with fresh dill.
  5. Refrigerate for at least 1 hour before serving to allow the flavors to meld together.
  6. Serve chilled and enjoy!
