Ingredients

  • Salt and pepper (to taste)
  • Parmesan cheese (1/2 cup, freshly grated)
  • Breadcrumbs (1/2 cup)
  • Parsley (1 tablespoon, finely chopped)
  • Garlic (2 cloves, minced)
  • Butter (2 tablespoons)
  • Onion (1 medium, finely chopped)
  • Bacon (4 slices)
  • Large mushrooms (12, stems removed)

Instructions

  1. Preheat your oven to 350 degrees F (175 degrees C) and lightly grease a baking dish.
  2. Rinse mushrooms under cool water and pat dry. Remove the stems and set the caps aside.
  3. Cut the bacon into small pieces. In a medium skillet, cook the bacon over medium heat until crispy. Remove the bacon from the skillet and set aside. Drain excess grease, leaving about a tablespoon in the skillet.
  4. In the same skillet, melt butter and cook the onions until they are soft and caramelized. This should take about 5 minutes.
  5. Add the minced garlic and chopped parsley to the skillet and cook for another minute, until the garlic is fragrant.
  6. Remove the skillet from the heat. Stir in the crispy bacon, breadcrumbs, and freshly grated Parmesan cheese. Season with salt and pepper to taste.
  7. Spoon the bacon and onion mixture into the mushroom caps, pressing gently to fill them to the brim.
  8. Arrange the stuffed mushrooms in the prepared baking dish. Bake for 15-20 minutes, or until the mushrooms are tender and the filling is golden brown.
