Onion and Bacon Stuffed Mushrooms

Ingredients

- 1/2 cup, freshly grated
- Breadcrumbs
- 1/2 cup
- Parsley
- 1 tablespoon, finely chopped
- Garlic
- 2 cloves, minced
- Butter
- 2 tablespoons
- Onion
- 1 medium, finely chopped
- Bacon
- 4 slices
- Large mushrooms
- 12, stems removed
Instructions
- Preheat your oven to 350 degrees F (175 degrees C) and lightly grease a baking dish.
- Rinse mushrooms under cool water and pat dry. Remove the stems and set the caps aside.
- Cut the bacon into small pieces. In a medium skillet, cook the bacon over medium heat until crispy. Remove the bacon from the skillet and set aside. Drain excess grease, leaving about a tablespoon in the skillet.
- In the same skillet, melt butter and cook the onions until they are soft and caramelized. This should take about 5 minutes.
- Add the minced garlic and chopped parsley to the skillet and cook for another minute, until the garlic is fragrant.
- Remove the skillet from the heat. Stir in the crispy bacon, breadcrumbs, and freshly grated Parmesan cheese. Season with salt and pepper to taste.
- Spoon the bacon and onion mixture into the mushroom caps, pressing gently to fill them to the brim.
- Arrange the stuffed mushrooms in the prepared baking dish. Bake for 15-20 minutes, or until the mushrooms are tender and the filling is golden brown.
