Onion and Bacon Stuffed Pork Chops

Ingredients
- Olive oil
- 2 tablespoons

- Dried thyme
- 1 teaspoon
- Garlic
- 2 cloves, minced
- Bacon
- 4 strips, cooked and crumbled
- Onion
- 1 medium, chopped
- Pork chops
- 4 bone-in or boneless, about 1-inch thick
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic; sauté until the onion is soft and translucent, about 5-7 minutes.
- Remove the skillet from heat and stir in the crumbled bacon and dried thyme. Season with salt and pepper to taste.
- Using a sharp knife, make a pocket in each pork chop by cutting horizontally through the side of the chop, ensuring not to cut all the way through.
- Stuff each pork chop with the onion and bacon mixture, pressing it firmly into the pocket to ensure it stays put during cooking.
- Season the outside of the pork chops generously with salt and pepper.
- In a skillet over medium-high heat, add a drizzle of olive oil and sear the stuffed pork chops for 2-3 minutes on each side until browned and crisp.
- Transfer the seared pork chops to a baking dish and bake in the preheated oven for 15-20 minutes, or until the internal temperature reaches 145°F (63°C).
- Once cooked, remove from the oven and let the pork chops rest for a few minutes before serving, allowing the juices to redistribute.
- Serve the onion and bacon stuffed pork chops with your favorite side dishes such as mashed potatoes, roasted vegetables, or a fresh salad.
