Ingredients

Original recipe serves 8

Shortcrust pastry
1 (9-inch) crust
Gruyere cheese
1 cup, grated
Heavy cream
1 cup
Eggs
3, large
Salt and pepper
to taste
Onions
3, large, thinly sliced
Bacon
6 slices

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet over medium heat, cook the bacon until crispy. Remove the bacon, let it cool, then crumble it. Set aside.
  3. In the same skillet, add the thinly sliced onions. Cook on medium-low heat until they are golden and caramelized, stirring frequently. This process will take about 15 minutes. Season the caramelized onions with salt and pepper to taste.
  4. In a bowl, whisk together the eggs and heavy cream until well combined. Stir in the grated Gruyere cheese.
  5. Add the crumbled bacon and caramelized onions to the egg mixture. Stir to combine.
  6. Unroll the shortcrust pastry and place it in a 9-inch tart pan. Gently press the pastry into the edges of the pan and trim any excess.
  7. Pour the egg mixture into the tart shell. Spread it evenly with a spatula.
  8. Bake for 30-35 minutes, or until the tart is set and the crust is golden brown.
  9. Remove the tart from the oven and let it cool for at least 10 minutes before slicing. This will help the tart to set and make slicing easier.
  10. Serve the tart warm or at room temperature. Enjoy!
