Onion and Bacon Tart

Ingredients
- Shortcrust pastry
 - 1 (9-inch) crust
 - Gruyere cheese
 - 1 cup, grated
 - Heavy cream
 - 1 cup
 - Eggs
 - 3, large
 - Salt and pepper
 - to taste
 - Onions
 - 3, large, thinly sliced
 - Bacon
 - 6 slices
 
Instructions
- Preheat the oven to 375°F (190°C).
 - In a large skillet over medium heat, cook the bacon until crispy. Remove the bacon, let it cool, then crumble it. Set aside.
 - In the same skillet, add the thinly sliced onions. Cook on medium-low heat until they are golden and caramelized, stirring frequently. This process will take about 15 minutes. Season the caramelized onions with salt and pepper to taste.
 - In a bowl, whisk together the eggs and heavy cream until well combined. Stir in the grated Gruyere cheese.
 - Add the crumbled bacon and caramelized onions to the egg mixture. Stir to combine.
 - Unroll the shortcrust pastry and place it in a 9-inch tart pan. Gently press the pastry into the edges of the pan and trim any excess.
 - Pour the egg mixture into the tart shell. Spread it evenly with a spatula.
 - Bake for 30-35 minutes, or until the tart is set and the crust is golden brown.
 - Remove the tart from the oven and let it cool for at least 10 minutes before slicing. This will help the tart to set and make slicing easier.
 - Serve the tart warm or at room temperature. Enjoy!
