Puff pastry
1 sheet, thawed if frozen
Unsalted butter
2 tablespoons
Onions
2 large, thinly sliced
Brie cheese
8 ounces, sliced
Fresh thyme
2 teaspoons, chopped
Salt
to taste
Black pepper
to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a skillet over medium heat, melt the butter. Add the sliced onions and cook, stirring occasionally, until they are caramelized and golden brown, about 15-20 minutes. Season with salt and pepper to taste.
  3. On a lightly floured surface, roll out the puff pastry sheet into a rectangle or circle, about 1/8 inch thick. Transfer the rolled pastry to a baking sheet lined with parchment paper.
  4. Spread the caramelized onions evenly over the puff pastry, leaving a 1-inch border around the edges.
  5. Layer the sliced brie cheese on top of the onions, ensuring even coverage. Sprinkle the fresh thyme, and additional salt and pepper as desired.
  6. Fold the edges of the puff pastry over the filling to create a border, crimping the edges for a decorative touch.
  7. Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and flaky, and the cheese is melted and bubbly.
  8. Remove from the oven and allow to cool for a few minutes. Slice and serve warm, garnished with additional thyme if desired.
