Servings: 6
Ingredients
- Puff pastry
- 1 sheet, thawed if frozen
- Unsalted butter
- 2 tablespoons
- Onions
- 2 large, thinly sliced
- Brie cheese
- 8 ounces, sliced
- Fresh thyme
- 2 teaspoons, chopped
- Salt
- to taste
- Black pepper
- to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a skillet over medium heat, melt the butter. Add the sliced onions and cook, stirring occasionally, until they are caramelized and golden brown, about 15-20 minutes. Season with salt and pepper to taste.
- On a lightly floured surface, roll out the puff pastry sheet into a rectangle or circle, about 1/8 inch thick. Transfer the rolled pastry to a baking sheet lined with parchment paper.
- Spread the caramelized onions evenly over the puff pastry, leaving a 1-inch border around the edges.
- Layer the sliced brie cheese on top of the onions, ensuring even coverage. Sprinkle the fresh thyme, and additional salt and pepper as desired.
- Fold the edges of the puff pastry over the filling to create a border, crimping the edges for a decorative touch.
- Bake in the preheated oven for 20-25 minutes, or until the pastry is golden brown and flaky, and the cheese is melted and bubbly.
- Remove from the oven and allow to cool for a few minutes. Slice and serve warm, garnished with additional thyme if desired.
