Classic Onion and Cheddar Soup

Ingredients
- Fresh chives
- 2 tablespoons, finely chopped
- Salt and pepper

- Sharp Cheddar cheese
- 2 cups, finely shredded
- Milk
- 1 cup
- Chicken or vegetable broth
- 4 cups
- All-purpose flour
- 2 tablespoons
- Garlic
- 2 cloves, minced
- Onions
- 4, large, thinly sliced
- Butter
- 4 tablespoons
Instructions
- In a large pot, melt the butter over medium heat.
- Add the thinly sliced onions and minced garlic to the pot. Cook, stirring frequently, until the onions are soft and caramelized, about 15 minutes.
- Sprinkle the flour over the onions and garlic, stirring well to coat the onion slices. This will help thicken your soup.
- Gradually pour in the broth while continuously stirring to ensure that no lumps form.
- Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let it simmer for 15 minutes.
- After 15 minutes, add in the milk and shredded cheddar cheese. Stir until the cheese is completely melted and the soup is smooth.
- Season your soup with salt and pepper to taste.
- Serve your Onion and Cheddar Soup hot, garnished with fresh chives. A side of crusty bread goes well with this soup!
