
Onion and Cheddar Soup

Ingredients
- Fresh chives (2 tablespoons, chopped (for garnish))
- Salt and pepper (to taste)
- Cheddar cheese (2 cups, shredded)
- Milk (2 cups)
- Chicken or vegetable broth (4 cups)
- All (purpose flour - 1/4 cup)
- Garlic (3 cloves, minced)
- Onions (4 large, thinly sliced)
- Butter (4 tablespoons)
Instructions
- In a large pot, melt the butter over medium heat.
- Add the onions and garlic, and cook until the onions are soft and caramelized, about 15 minutes.
- Sprinkle the flour over the onions and garlic, and stir well to coat.
- Gradually pour in the broth while stirring constantly to avoid lumps.
- Bring the mixture to a boil, then reduce the heat and simmer for 15 minutes.
- Stir in the milk and cheddar cheese until the cheese is melted and the soup is smooth.
- Season with salt and pepper to taste.
