Originating from French cuisine, this soup is a more cheese-laden version of the classic French Onion Soup.

Servings: 6

Ingredients

Fresh chives
2 tablespoons, finely chopped
Salt and pepper
to taste
Sharp Cheddar cheese
2 cups, finely shredded
Milk
1 cup
Chicken or vegetable broth
4 cups
All-purpose flour
2 tablespoons
Garlic
2 cloves, minced
Onions
4, large, thinly sliced
Butter
4 tablespoons

Instructions

  1. In a large pot, melt the butter over medium heat.
  2. Add the thinly sliced onions and minced garlic to the pot. Cook, stirring frequently, until the onions are soft and caramelized, about 15 minutes.
  3. Sprinkle the flour over the onions and garlic, stirring well to coat the onion slices. This will help thicken your soup.
  4. Gradually pour in the broth while continuously stirring to ensure that no lumps form.
  5. Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let it simmer for 15 minutes.
  6. After 15 minutes, add in the milk and shredded cheddar cheese. Stir until the cheese is completely melted and the soup is smooth.
  7. Season your soup with salt and pepper to taste.
  8. Serve your Onion and Cheddar Soup hot, garnished with fresh chives. A side of crusty bread goes well with this soup!
