Onion and Feta Stuffed Peppers

These delicious stuffed peppers are filled with a savory mixture of onions, feta cheese, and herbs.

Ingredients

  • Olive oil (2 tablespoons)
  • Salt and pepper (to taste)
  • Dried oregano (1 teaspoon)
  • Fresh parsley (2 tablespoons, chopped)
  • Feta cheese (1 cup, crumbled)
  • Onion (1 large, finely chopped)
  • Bell peppers (4, any color)

Instructions

  1. Preheat the oven to 375°F.
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a skillet, heat olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
  4. In a bowl, combine the cooked onion, crumbled feta cheese, chopped parsley, dried oregano, salt, and pepper. Mix well.
  5. Stuff each bell pepper with the onion and feta mixture.
  6. Place the stuffed peppers in a baking dish and bake for 25-30 minutes, or until the peppers are tender and the filling is golden brown.
