
Onion and Feta Stuffed Peppers
These delicious stuffed peppers are filled with a savory mixture of onions, feta cheese, and herbs.
Ingredients
- Olive oil (2 tablespoons)
- Salt and pepper (to taste)
- Dried oregano (1 teaspoon)
- Fresh parsley (2 tablespoons, chopped)
- Feta cheese (1 cup, crumbled)
- Onion (1 large, finely chopped)
- Bell peppers (4, any color)
Instructions
- Preheat the oven to 375°F.
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a skillet, heat olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
- In a bowl, combine the cooked onion, crumbled feta cheese, chopped parsley, dried oregano, salt, and pepper. Mix well.
- Stuff each bell pepper with the onion and feta mixture.
- Place the stuffed peppers in a baking dish and bake for 25-30 minutes, or until the peppers are tender and the filling is golden brown.
- Serve hot and enjoy!
