Instructions
- Preheat your oven to 375°F (190°C).
- Prepare the bell peppers by cutting off the tops and removing the seeds and membranes. Brush the outside lightly with olive oil and season with a pinch of salt.
- In a skillet over medium heat, warm the olive oil. Add the chopped onion and sauté until softened, about 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.
- In a large mixing bowl, combine the sautéed onion and garlic with the crumbled feta cheese, chopped parsley, dried oregano, lemon juice, salt, and black pepper. Mix thoroughly until well integrated.
- Generously stuff each bell pepper with the onion and feta mixture, pressing down gently to ensure it's packed in.
- Arrange the stuffed peppers upright in a baking dish. If they are wobbly, trim a small piece from the bottom to create a flat surface.
- Cover the dish with aluminum foil and bake for 25-30 minutes. In the last 10 minutes, remove the foil to allow the tops to become golden brown.
- Serve hot, garnished with additional fresh parsley if desired, and enjoy your flavorful Mediterranean stuffed peppers!
Tips
- For a spicier kick, add crushed red pepper flakes to the filling.
- Feel free to mix in other vegetables, like diced tomatoes or spinach, for added nutrition.
- These stuffed peppers can be made ahead of time and refrigerated before baking. Just add a few extra minutes to the baking time if cooking from cold.
