Ingredients

Pasta (spaghetti or linguine)
8 ounces
Olive oil
3 tablespoons
Onion
1 medium, thinly sliced
Garlic
4 cloves, minced
Shrimp
1 pound, peeled and deveined
Cherry tomatoes
1 cup, halved
Fresh basil
1/4 cup, chopped
Red pepper flakes
1/2 teaspoon
Salt
to taste
Black pepper
to taste
Parmesan cheese
1/2 cup, grated

Instructions

  1. Cook the pasta according to package instructions in a large pot of salted boiling water. Drain and set aside, reserving 1 cup of pasta water.
  2. In a large skillet, heat the olive oil over medium heat. Add the sliced onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for an additional minute, making sure not to burn it.
  4. Add the shrimp to the skillet and cook until they turn pink and opaque, about 3-4 minutes per side.
  5. Incorporate the halved cherry tomatoes, chopped basil, red pepper flakes, salt, and black pepper into the skillet. Cook for another 2 minutes, allowing the tomatoes to soften slightly.
  6. Add the cooked pasta to the skillet, tossing everything together. If the mixture seems dry, add a splash of the reserved pasta water until the desired consistency is reached.
  7. Remove from heat and sprinkle with grated Parmesan cheese before serving.
  8. Serve hot, garnished with additional fresh basil if desired.
